Arabic Shawarma Recipe | Restaurant Style Arabic Shawarma | Tahini Sauce and Bread (Complete Recipe)

Shawarma is originally a dish from Middle Eastern cuisine. Thin slices of meat cooked slowly and wrapped in a loaf of bread with some vegetables.

  • Excellent and simple recipe . Came out prefect. A tip for you. Cut foil paper put the marinate chicken wrap it like toffee shape put in freezer for 10 hours till ice is not formed take out the chicken and cut into thin strips and cook in a pan. Same taste and texture like doner roll.

  • Recipe in English

    *1kg boneless thighs
    Chicken marination:
    *1tbs ginger garlic paste
    *3tbs yogurt
    *2tbs vinegar (to tenderise)
    *Juice of 1 lemon
    *Salt 1 teaspoon
    *Red chilli 1 teaspoon
    *Pinch of turmeric (for colour)
    *1 teaspoon of black pepper
    *1tbs zeera/crushed zeera
    *Quarter teaspoon all spice/garam masala
    (Marinate for 2-3 hours. If you want extra flavour , marinate for 12 hours)

    *1 cup all purpose flour
    *1/2 teaspoon yeast
    *1/4 teaspoon salt
    *1/2 teaspoon sugar
    *Luke warm water for mixing the dough

    (Dough should not be too wet. After kneading, pat with oil and let it rest for 1/2 an hour)

    Cooking the chicken:
    (Can be cooked in a non stick or grill pan)
    *Oil the pan enough so the chicken doesn’t stick to the pan and cook the chicken on each side for 7 minutes each on medium flame.
    *The water released from the chicken needs to be dried
    (The chicken will be cooked when it’s tender and breaks easily)
    *Cut the chicken in strips

    Cooking veggies:

    Saute tomatoes and bell peppers (cut in strips/julliane) in the same pan the chicken was cooked in and set aside

    Making shawarma wraps:
    Knead the dough to get rid of air bubbles and roll it out In round shapes and cook on medium-high flame. Don’t cook it completely since it will be toasted once again at the end of shawarma assembly.

    Tahini sauce:

    Add Toasted sesame seeds (about 1/2 cup) in blender and blend until they start to mush together. Add in 2tbs of olive oil and blend again until a paste forms, add in 1/4tsp salt and blend again. Sauce is ready.

    Main shawarma sauce:
    (this is for 1 shawarma, increase the sauce according to the number of shawarmas you are making)
    *1tbs mayonnaise
    *2tbs yogurt
    *1tbs of the tahini sauce prepared before
    *Lemon juice, salt, black pepper according to taste

    Add sauce, chicken strips and sautéed veggies, top with some more sauce, roll the shawarma and toast one both sides and serve with some more sauce.

    (Pickled veggies can also be used in this recipe)
